34. nice but…that isn't ricotta it's curd:
    1. ricotta is not a cheese, believe me, I know it's hard, but technically it's a cheese byproduct
    2. ricotta production involves reheating the whey leftover from making other cheeses such as mozzarella and provolone.
    I don't want to be mean, but it's frustrating (and unrespectful) when in other countries people wrongly call, consider or sell "fake Italian" products. it's important for our culture

36. I would do the Quesadilla hack with sliced cheese instead for better cheese distribution. I know it's a sin, but you're already cooking with a godamn toaster anyway.
