Plus I love that you talk to the locals, it gives us more insight into their cultures, everyone else talks to their travel buddy, or worse themselves. Keep it up.

Undoubtedly Taiwan is the most underrated destination. Once you are in, it gives you all traditional, modern vibes with amazing views & die to for food, the night market is an institution. We have the same waitress from Din Tai Fung, she is sooooo lovely ❤
You forgot to mention that you need a Taiwanese phone number to register an Easy Card for the U Bike system. I think you can use your debit/credit card for three rentals of you're a foreigner.
